If you have GI sensitivities to garlic, or you live with a person who loves it and the smell is hard for you to stand (this is the inspiration behind this post to be honest I had people ask me for the spouse) so for whatever reason you want to reduce the garlic strength then here is a couple of ways for you.
First: baking or confit the garlic.
Second: slice the garlic lengthwise in half and remove the garlic sprout. That will reduce the heartburn effect big time.
Third: crush your garlic instead of grating or finely chopping, the finer the cut of the garlic the stronger its pungent punch.
Fourth: cure with salt and lemon.
