Meal planning tips/favorite pantry staples?

I struggle to make dinner most nights because I am too wrapped up in my hyperfixations or am simply overwhelmed in general. Planning helps a lot, but sometimes I really cannot vibe with what I had planned. What are some ways you get around this or food you keep around for simple recipes? What systems have you put in place to aid you in getting dinner done?

Hey! I totally get where you're coming from, and I've been there too. To make life easier, I like to prep some basic ingredients in advance and keep them in the fridge. That way, when it's time for dinner, I can just mix things up and whip up a healthy meal. I usually cook up some protein like roast meat, boiled eggs, or baked fish, along with grains like rice, quinoa, or buckwheat, and some veggies, either boiled or roasted. I also make sure to have fresh veggies on hand, like tomatoes, celery sticks, cucumbers, and onions. Another must-have for me is canned beans or lentils, along with canned fish. I prep all of this ahead of time, so when I'm ready to eat, I can easily mix everything together. I throw in some sauce for flavor, and that's it—dinner is served!

I just plan extra meals on days where I'm eating something that I'm not always down for. That way if I don't want fancy Normal People food I can plan my week around what I *want* to be able to eat *and* the potentially unhealthy substitute without A: feeling guilty for going off course, B: feeling guilty over not eating as healthily as I wanted to, C: Wasting what may be limited mental energy trying to think of something easy *and* accessible, and D: Breaking my streak and losing momentum
