Beginner Meal Prep for Endurance Sport

I can run for 8 hours, but grocery shopping and meal prepping for 4 hrs on Sundays feels impossible. I'm looking to start meal prepping anyhow, and could use some advice. I'd like to avoid buying dozens of complicated ingredients per meal, and hope the prep time can be contained within just a couple hours once a week. Help? πŸ₯ΊπŸ™
