I highly recommend rice bowls. Really simple because all it takes is rice + whatever you have in the fridge. Ours are usually kimchi, meat (whatever we have) marinated in basically soy sauce sugar, a few pepper flakes, garlic, and ginger, two vegetables (again whatever we have). Often nuts and avocados are added. You can also make it with meat seasoned with taco seasoning for example and add corn and beans and avocados, etc. There are many different ways to prepare rice bowls and it just uses up what you have. (I promise! There's rice under there haha)
