Leftover Oatmeal

Does anyone have leftover oatmeal ideas? I made too much on sunday and still have more than half of what I made left and its already Thursday. PS recipes without bananas preferred (allergy). Or at least ones where substituting it with applesauce won't wreck it

Look up some recipes for muffins, cakes, breads. When I have things like this happen to me I just have to break open the recipe book of imagination.

I'm personally not a fan of meatloaf but I think my hubs likes it. Sounds like it could be an adventure worthy of trying... Hmm. Now does anyone have a good meatloaf recipe? 🤣😂

At the moment I do not, I used to make this all the time when my husband was still alive but that was 16 years ago. However, now that I'm trying out the vegan diet I should look into making one with my new venture.

I assume most meatloaf recipes have eggs -- replace that with one tbs flaxseed and 2 tbs water (let it sit bout 5 minutes to get a congealed texture). And for the meat, mushrooms would be an AMAZING substitute. I think beyond that you could probably use a non-vegan recipe? (Oh and if it has butter, country crock plant butter is scrumptious. Or avocado oil is a good sub.)

I have been dabbling here and there with the vegan diet probably a year and a half now. Started shortly after my cancer diagnosed back in the fall of 2022. I have several vegan apps downloaded that have lots of recipes. One recipe I have for a meat substitute is walnuts. The options are actually only limited to your imagination. At the moment my kitchen is being renovated to be handicap accessible. It's been a slow process throughout this summer. But once it's completed I'm excited about getting a lot of different suggestions / recipes mixed up. But, thank you so much for all of your hopeful suggestions.

Yes the country Crock plant-based butter is quite good. I switched back and forth between the avocado and the olive oil. I've been sticking mainly to the avocado lately.

Ooh the reno sounds exciting. Good luck with that! Hope it turns out to your liking and it makes life easier. And yeah I'm a vegan dabbler too -- mostly cause allergies 3 of us are allergic to milk and coconut, and one allergic to eggs. So I use a lot of vegan products because hey. Allergies. Unfortunately its hard to find vegan products without coconut these days. (And the oil just goes straight through us so thats a no go too. And that's the most predominant form of coconut in things!) But we get by.
