For me it is not easy as you loose the spontaneity when it comes to 'grab something to eat'.
I am not spontaneous so it is easier if you plan ahead and always have the basic this is in your fridge, apart from veggies and sprouts that you can practice growing quite easily. For example:
Always have soaked almonds, cooked chickpeas, soaked lentils.....
From almonds you can make milk ( as from other nuts and some legumes if you like) and seeds.
Chickpeas you can use for either cooking and eat them as is, or in salads or make hummus with tahini paste, or make cookie dough and other things as grind/ mix in a blender or food processor and make buns, breads, tortillas, etc' The same you can do with lentils .
It is always good to make one or two dipping or salad dressings.
I find it way more difficult while travelling, cause on the plane the food chefs have little to less imagination ( my personal experience). While travelling, not always you will be close to a natural food store or market, so you must take that I to consideration, if you do not consume preserved foods or you prefer gluten free and/ or organic food ...
It is a matter of practice.
There are so many recipes in the internet so in that sense you are all set.
