30 people!!!!

I need to cook for 30 in a couple of weeks for alpha. I want to do something festive, main and dessert. One non-red meat eater, I don't want to spend a fortune, needs to be made in advance and reheated. Any ideas?

I used to cook for my friend group of 40, I avoided birds because they took up too much over space. A mix of brisket / honey gammon with the usual roast trimmings like potatoes and sweet parsnips and carrots always cooked in volume easily. Those are cheaper meats too to buy en mass

Do a coq au vin! Easy to make in advance and just leave braising, you can eliminate the bacon/pork, and it will blow peoples minds. Serve over mash or polenta!
