What do you do with ultrapasturzed milk?

As a cheese maker, when someone, kindly, gifts you ultrapasturized milk, what do you make with it?!

I believe you can make ricotta. It's better with not UHT milk but it's possible.

I made cheese start. We like creamy Ricotta, UHT milk's Ricotta is mushy. 😝😄
