Use fresh ground whole wheat flour, half the measure of sugar, replace the reduced amount of sugar with honey, monk or coconut sugar. Use only "real" ingredients: for example, no hydrogenated fats, use butter or coconut oil. You should be able to make just about any type of cookie "healthy". My children even make their own "chocolate chips" for "healthy chocolate chip cookies"! It just depends on the boundaries you want to set. We are allergic to corn and chocolate so white sugar (has corn), white flour (has corn), and margarine (has corn) are absolutely forbidden for us. Besides that we have one diabetic that we truly try to keep their blood sugar stable with diet, rather than pills or shots, and cookies actually can help with that. Made the way I suggested they actually have a fair amount of protein and just the right amount of sugar for right before exercising, or something mentally stressful like school tests.
