Adding in veg proteins

Hey y'all, I've been having a tough time getting veg communities to engage with this question, but please hear me out. I'm trying to slowly wean my family away from meat, to reduce our meat consumption. How do you know what veg proteins go well in a meat dish? For example, with chicken fajitas, i can reduce a % of the chicken by adding in black beans, without causing a family kerfuffle. But I'm too new to know which legumes go well with which dishes :(. Much of my family is neurodivergent, and can't handle abrupt changes. I can't just spring veg dishes on them-- I *have* to go slow. This upsets some vegetarians/vegans, I think, but I don't know where to turn to. Please help

Soups and curries are a good way imo! You can make chicken soup/ curry but replace some of the chicken with chickpeas and add lentils. Woks, stir-fries, more east Asian dishes are best with tofu, firm tofu. You can get the best texture by freezing it, then squeezing out the excess water and coating it in corn starch. Then either bake it or fry it. Bolognese is one of the best ways to hide veggies. You can replace a part of the meat with lentils or TVP or soy mince. Hey, thank you so much, Couch Bean! I appreciate your thoughtful reply. I'll have to try to get more into soups, curries, and sauces in general! I'll admit I hadn't really thought about TVP before -- honestly, I had to look it up. But that seems really useful! This week, I'd planned to make a beef pot roast, and now I'm wondering if I can hide some lentils in the pot roast sauce! No way to know but to try, right?
