Different colour

I've made the Mongolian beef noodles twice now and mine comes out a very rich glossy brown/black the colour of hoisin and soy. Looking through the photos others have posted everyone else's is very light in colour. So what is making mine so different? I use everything the recipe says too bahh the allium. Any suggestions would be great

Different cameras take different colored pictures. The results of digital images are not reliable. If it tastes good don't worry about the color.

Soy sauce, brown sugar and hoisin can vary drastically depending on what is available where you live. Especially the hoisin depending on the brand. I've gotten some bright red and some really dark brown. They don't specify what type of brown sugar so I assume most use the medium or light but there is Muscovado, Jaggery, Light Brown, Dark Brown, Turbinado, Demerara, Piloncillo etc

Wow...they look so amazing! Much more appetizing with that delicious dark sauce.

Could be dark vs light soy?
