Depends. I don't recommend you use precooked, pre-seasoned meats (like rotisserie or Trader Joe's pulled chicken) because this may throw off the flavor. However if you are using similar seasonings in the chicken during the cooking process and setting it to the side it'd work great! Side note, unseasoned precooked chicken (take Tyson grilled chicken breast) can work just fine, but it may lack the depth of flavor because the chicken wasn't seasoned during the cooking process.

I don't see why not. Store the precooked chicken in an air tight container and make the recipe the next day. I wouldn't go any longer than the next day or the chicken may turn out dryer than you like
