No. Mexican cheese mix. Melted. In the US you can find it in any grocery store. To make at home take .5 lbs of orange cheese and 1 lb of white cheese and grate into the same bowl. Mix lightly. Use. It's probably just Colby jack. That's what we use at the Mexican place I work at. Mexican cheese at the store just has spices on Colby jack.

Andrew Sirls Colby Jack is 2 parts Colby cheese (a white skim milk cheese) mixed with 1 part Cheddar cheese (a yellow, or orange if colored, high fat cheese) while they are still curd. Then pressed together into the blocks we are all familiar with. You mentioned spices added. Do you know what they might be?

Ok. I am wondering because I make cheese at home, and a artesian cheese maker in Utah made a delicious Mexican Colby Pepper Jack that I have NOT been able to find out the spice mix he uses so I can make it in my kitchen. I know he doesn't make the mix. I also know it has large pepper pieces.

Could be pepper jack mixed with cheddar maybe? I think I've seen that somewhere before. I know I've found it with jalapenos and habaneros.

Pepper jack is Monterey Jack with a peppers and spices mix added to the curd then pressed. But I do not know what is in the seasoning mix. I sure wish I did though.
