What's the key to a good soup?

I want to start cooking soups, what's some universal things that I must do no matter the soup to make it a good soup?

Another thing is to season your soup as you "build it". Adding herbs, spices, salt and pepper gradually throughout the cooking process enhances the soups flavor.

To make a creamier healthier soup, I blend a can of white beans and a bit of (soy) milk instead of the cream :)

Add a Bay Leaf or 2 (or 4)....it just adds something to every soup I make!

Start with the simpler soups and modify to your liking, experiment with herbs and spices and get creative with the ingredients. Salt and pepper are also a must, but season cautiously and taste as you go.

Making a roux with flour and butter or oil is a good way to thicken a soup. Heavy cream is awesome for making cream soups have that smooth mouth feel. Using an immersion blender or regular blender to puree some or all of your soup can also create the creamy texture you are looking for.

Interesting, do the white beans add taste? Can I use regular milk or is it really the soy milk that works?

The beans add almost no taste, they are quite neutral. I use soy milk as I'm vegan, but feel free to use your milk of choice :) give it a try! It a very nutritious way to add protein, fibre and good carbs to any cremy soup. I use it specially with broccoli cream soup. Another nice way to make creamiee soups is making a cashew cream, blending soaked cashews, salt, olive oil, bit of water and lemon juice. I use that option less because, even though it's still nutritious, it has a bit more fat... hope these tips help! 🙂

Ah okay! If I want a slightly creamier and thicker soup do I add flour and heavy whipping cream? Could I use those in any recipe
