Pumpkin ideas

I have a 9lb pumpkin grown in my own garden, need a way to eat it that isn't soup or desert.

I would incorporate it in a chickpea curry, with a lot of Indian style spices and coconut milk. Or bake it with a bit of olive oil and make a bowl with cous cous, hummus or tahiny sauce and tons of veggies. Or pan fry it with harissa and serve it on top of hummus and a salad... 😋

There is this recipe that my dad used to make. I would recommend you to try it. All you have to do for it is to first, fry all sides of the pumpkin pieces using butter in a pan and then wait for them to release little bit of their juice while you put on the lid. after some minutes you can either add some honey or brown sugar to it. Just be careful not to let the pieces get so soft. After that it's ready and you can serve it with some chopped walnuts on top. Easy,fast and extremely delicious.

I have seen recipes that carve out the pumpkin & the bake a savory rice dish in it (in oven). If the pumpkin is too big to do that, u can always cut it in half & do the rice thing. I am going to try using my small, home grown pumpkins like an acorn squash & bake it in the oven with butter & brown sugar.
