I am assuming that the ones that are omitted are omitted because it is somewhat a matter of personal taste. I have seen a fair amount of variation in terms of the amount of chunky ingredients and the liquidity of sauces. And herbs and spices always can vary. But I agree most people are more comfortable adjusting a recipe to their taste than experimenting from the outset.
