Is it texture, or is it smells? Or both?

If it is texture, i.e. gagging on smooth foods, stay with something more chewy, i.e. raw or lightly steamed instead of cooked to mush. Also, find a cranialologist that also understands the roof of the mouth because if the palette is out of alignment it will cause texture sensitivity. If it is smells, avoid strong sented ingredients, i.e. use leeks instead of onions or chives instead of garlic. Also, increase the amount of zinc in their diet and/ or supplement. Zinc is the "smell" mineral and a somewhat serious deficiency manifests its self as "every thing smells like feces". However, if there is an extreme deficiency the nose will be "deaf" as my son puts it.

I actually adjusted my own children 's palettes when they were small, it isn't hard, but it would be wordy to try to describe it.
