Uhlířina is a traditional Old Bohemian dish rooted in the kitchens of forest charcoal burners and miners, particularly in the Kladno region. It was a humble, filling meal made from leftover potatoes and dumplings, mixed with onions fried in lard and sometimes even with a sauerkraut, bacon, smoked meat or cracklings. Its name literally comes for the Czech word for a charcoal burner, "uhlíř". 🌲
