How to achieve the crispiness of minced meat with non-meat ingredients?
I've used lentils, beans, mushrooms instead of meat but it's always on a mushy side, any suggestions on how to make it crispier?

well, I'm no expert on this point, but you can try leaving the mince on a paper to dry it a bit. Also, you might try adding some rolled oats, breadcrumbs or ground flaxseed, which should make it more crispy and give it a better texture in general :)
