What is the advantage of slow cooking?

I am interested to understand what is happening in the process of slow cooking, I found recipes for chicken bone broth that ask for 3-4 hours of cooking. I make mine on the stove and don't spend as much time. But happy to try it out if there are advantages to it!

Agree with @Jenn G! Moreover, when tough meat is being cooked, it breaks down the collagen, and other connecting tissue help make the sauce gelatinized. All this is fancy talk for melt-in-your-mouth meat and silky thick sauce!

The biggest advantage is that you can “set it & forget it”. A slow cooker meal can cook while you are away from home or busy on projects. You come home to a nice smelling house and a cooked meal

Making bone broth should be done over 24 to 48 hours and needs some apple cider vinegar to leech out the nutrients in the bones. Low and slow also gives you a very deep rich flavour that you absolutely can't get doing it quickly. And yes I have a nutrition qualification, I'm not just saying what I think :-)
