What is the point of lemon zest?

My understanding is that there's a ton of flavor in the peel of the lemon - it has oils in the skin! So you get a ton of lemon flavor without the liquid or pulp. It's a shortcut to lemon flavor without having to change consistency with juice. Plus, it helps you use all parts of the lemon!

Lemon zest actually contains more flavor than lemon juice and is less acidic. So when adding zest you're boosting flavor only but not the acidity as well! Also small advice, when zesting a lemon make sure to use only bright yellow flesh of the peel, white part is bitter and not as flavory

Zest is used to infuse citrus flavor into a variety of dishes! And there is difference between zest, peel and rind. Zest is colored outer layer of the skin (yellow part). Rind includes the zest and just a bit of the bitter white under layer, if you want to have bitterish flavor it is great option! Peel is whole jacket (yellow + white part) - everything but the flesh. I looooove them candied.
