Any potato. Red potatoes would be great here because then you won’t have to peel them.

Yukon gold potatoes are the yellow potatoes. But mkolsen is correct, red potatoes would also work well. Probably not the white, russett potatoes, as they are quite starchy. Those are better for baked potatoes.
