I don't see why you should not reheat it. I often do that with stuffed peppers.

I prefer my peppers to retain some bite to them. I hate mushy peppers so with that in mind I would probably cut the recipe in half or you could use Pablano peppers instead; they stand up better to a reheat than regular bell peppers.
