Poaching eggs failed

I tried poaching eggs several times. They never turn out looking nice. Egg whites usually break apart. What am I doing wrong?

Usually I bring water and 1 Tbs of vinegar to a slow boil. Egg is already in a small bowl. I give the water a good swirl, and slide the egg in the water as close to the middle of the whirl as possible. You can add multiple eggs one after the other as well. I check them after a few minutes by bringing them up with a big spoon, and when I think the white is set, I take them out. Some people dry them on paper towel. A good tip is to use the freshest eggs you have. Otherwise you will have more white web through the water, but still manageable. Good luck!

Yes the vinegar is a really good tip! I always put a dash of it in and it makes all the difference (and you don’t even taste it once they’ve cooked). 😁

I break my egg into a strainer and drain off the water, yes water. then I roll the egg into a slow boiling pan and cook until it is done to my liking. Never fails. You can do multiple eggs but I always crack and drain in the strainer one at a time.
