Storm Weaver
I keep jars of cubed, baked, seasoned tofu in my fridge, then toss it in with veggies and grains for quick meals. Last night, I tossed some chili flavored cubes into rice, tomatoes, peppers, onions, and corn and made Spanish rice. Today, I tossed Italian Sausage Seasoning flavored ones (herbs and spices, no animal products) in with sliced potatoes, bell pepper, and onion. Easy and quick, and I can bulk prep the tofu cubes on my afternoon off... just marinate/season and bake! Then they're ready for a quick toss into a meal or salad when I'm ready to eat.
