These days I use eggs for everything! I can eat them for breakfast, lunch, and dinner. Boiled and sliced with salt, pepper, chili flakes, and olive oil drizzled on top. Over easy with veggies on the side, scrambled with cheese on top. For a quick lunch I often do omelettes with some egg whites. I even throw fried eggs in bowls for dinner on top of zucchini noodles or quinoa with sauce on top.
