Non-oily chinese food

I've noticed that everytime we eat out in Chinese restos that chinese food is very fatty and oily even the steamed foods seem too oily for my taste. Don't get me wrong, I love Chinese cuisine just that I wish I can tone down the 'oiliness' of the food without changing much of the taste. Does anybody know how I can achieve this when cooking at home?

Ask yourself this question, Am I eating truly traditional Chinese food or an American version of Chinese food. Authentic Chinese food is not oily, heavy nor is the sauce to thick and Soy based. Authentic Chinese food uses light batter and deep fries in lighter oil over a shorter amount of time. Also, authentic Chinese food typically has a lighter and thinner sauce base and uses other flavors besides Soy Sauce. Authentic Chinese food is not Soy Sauce dependant.
