Spices and herbs?

Which spices and herbs do you use most often to enhance the flavor of your dishes? I mostly use turmeric, and combine it with rosemary or basil, but I would like to try out something new :)

I just got a new spice - tomato powder - that adds a nice bit of umami! I also like spicy things so I use different types of chile flakes - Urfa has a smokier taste, Aleppo is fruitier (similar to Korean gochugaru!), and regular crushed red pepper of course! Another more exotic one I got recently is “grains of paradise” which is a bit like peppercorn but not as hot. Smoked paprika is another favorite of mine, as well as sumac (used in Mediterranean dishes - sweet and tart).

Saatar it's a combination of spices that has been around since the 4th century. Cumin coriander sesame and sumac. I gives it a warm umami taste. although it depends where you get it there are variations.

When it is winter time, I go through sooooo much thyme! Also cumin, coriander. Spring and summer I use a metric ton of basil and dill.
