Resting time

Hi!!! Ready to try this amazing recipe for Easter Sunday and I hope you'll see my question in time. My question is: the resting time is somewhere between 24 and 48 hours, or it has to be either 24 or 48? I heard that the raising of pizza dough, focaccia dough etc goes in cycles (up and down and up again) so I was wondering if that was the case. Thanks! :)
