Creamy Polenta
Cooking time: 10 to 15 minutes
Yield: Serves 6
4 cups whole milk
1 teaspoon salt
dash of pepper
2 tablespoons butter
1 cup fine corn/maize meal
In a large, heavy-based saucepan bring the milk and butter to just under a boil then reduce the heat to medium low. Add your salt and then slowly add your corn meal, stirring constantly. Whisk for a few minutes until smooth and lump-free. Reduce temperature to LOW. Simmer for 7 – 10 minutes until cooked. Stir occasionally and add more milk if you find it too thick.
