Recently heard of Chinese dried scallops. Any recommendations for how you find them and, more importantly, cook them?

You can find them in Asian grocery stores, preferably Chinese one. It can be used in soups and stews.. or even stir-fry dishes! But you need to first soften them by soaking. I usually simply just soak dried scallop meats in hot water for 30 mins.
