Making a good steak tartare starter is tricky as it is eaten raw. Do you have any tips on which part of beef is most suitable for making this? and does it spoil easily?

You should use high-quality cuts for steak tartare. Go for beef tenderloin if you can find it. Avoid pre-minced meat at all costs since you'll be eating this raw. Also, for the same reasons, you should get the highest quality ingredients both meat and eggs, if you're using them here. Honestly, I wouldn't test how much it needs to spoil, it's probably best eaten right away, no leftovers.
