What makes a cupcake moist?

I have been experimenting on different cupcake recipes but I am not a pro baker. Sometimes my cupcakes turn out dry or sometimes too moist and fatty. Is the amount of oil/butter that I need to adjust or the type of ingredients that I use that I need to change?

If you use a box of mix, add a can of soda, you won't be able to taste the soda and the cake is fluffy and moist

try adding half a cup of sour cream or (if that weirds you out) greek yogurt to your batter! it's the secret ingredient to most deliciously moist cakes

This sounds like you have a ratio problem. In the pro kitchen, we use ratios to guarantee consistent results. Once you learn them, you can make any recipe a success! A little homework: Google ‘cake ratios chart’. Fine Cooking or Cooks Illustrated has some great information. You got this. 💪
