What are some tasty and healthy recipes for lazy people?

One of my favourite things to do on a lazy evening is chop red onions, courgettes, and bell peppers into bite size pieces. Add some cherry tomatoes. Roast them on a high heat in the oven for half an hour with olive oil, salt, and pepper and tossing them occassionally. Serve with crusty bread and hummus!

most Asian dishes are super easy if you have the basic sauces on hand. This one is super yummy, and not too hard, but any rice/noodle, veggie, protein combo with an acid, salt, and umami tastes very yummy!
