Easy go-to

I'm on an extended stay to help take care of my parents for a bit and am working in a different kitchen. I've come to realize a GREAT and easy go-to is a simple white wine sauce with either chicken, white fish, or even salmon. Olive oil, shallot (or fine diced onion), garlic, white wine, a little butter, and thyme if you have it. Reduce it just a bit and it makes for a versatile sauce... and seems *~fancy~*. EDIT: add a squeeze of lemon about a minute before turning off the stove

Add it to some fire roasted tomatoes would probably be pretty *chef's kiss* also!

Love both the simplicity AND the *~fancy~*ness! (Plus, you can drink some of the wine with dinner :D) What do you usually pair it with??

I would do it with jasmine rice, and if fish, also asparagus, or if with chicken, maybe also zucchini. Forgot to add... do a squeeze of lemon in the sauce about a minute before turning off the stove!!
