Hi, if you’d like to adapt to same day, add an extra teaspoon (4g) instant yeast and let it sit at room temp in bowl for an additional 1.5 hours after your stretch and folds. Then turn into baking pan to proof for an additional 1.5 hours before baking. The texture and flavour improves with the long, slow fermentation that the overnight rest in fridge allows for, but it is definitely possible to do it same day!
