Start small. Learn small swaps that work for you. A drastic change isn’t for everyone, and can actually shock your system. Over time, you will make the change gradually.
And as for taste, you can’t ruin taste by changing to vegan if you are using the right seasoning in the first place. Learning to use fresh herbs and natural spices is an amazing skill. Just takes practice!
