The acidity or pH determines which foods can be canned and how they should be canned. The higher acidity foods like jams, fruits, and pickles can be canned in a water bath. Vegetables and meat have low acidity (pH> 4.6) and they must be canned using a pressure canner. Food that contains milk should not be canned at all because milk is low in acid. Grains, pasta, noodles, nuts are should also be avoided. Hope this was helpful.
