Is there some difference in flavor based on which part of chicken you use? I've usually used chicken back or wings but I haven't noticed any difference.

Legs and drumsticks would be the best choices I think because they are boned.

I usually use breasts with bones. And use half of the meat for some other dish.

Chicken thighs with bone in is probably the most flavoursome

my mum always uses leg bones with the mid rib carcus. works nicely for soups

I think the thighs, because more flavor and it can stand up to longer cooking time without getting dry.
