I am looking for an authentic vegan Mexican recipe can you help me?

Traditionalists claim that authentic Mexican food is meat-heavy and that can't be vegan. :)

We chatted with our head chef, Susy, who is from Mexico recently about this as she was working on developing new vegan recipes. She said a lot of traditional Mexican dishes are veggie based such as nopales, beans, elotes, and in the South of Mexico there are lots of dishes flavoured with sauces made with dried chillies and fresh veggies. It is true that lard is used a lot in dishes but can easily substitute. Cactus salad and Mexican rice are her faves. Susy developed some more modern vegan twists on favourite dishes so be sure to take a look - here’s one I’ve been enjoying!
