I have a similar meal I make but I add complementary vegetables like broccoli onion scallions zucchini.. I use my veg as a multi vitamin opportunity to be healthier... It's not hard, make choppin relaxing and get better at it ... Learning something new is a good thing...

That sounds great! I also love when there are a lot of veggies in my meal, especially green ones like zucchini, brussels sprouts, and broccoli.
