Over easy with the whites set, and the yolks runny. If you don't have any luck flipping the eggs over, here's what you can do and it works great for us. Over medium heat, melt a tablespoon of butter, or you can use bacon fat. Crack your eggs in a bowl and once the fat or butter had melted, slip your eggs into the pan. Once the whites have set, add a tablespoon of water, and cover it with a glass lid. Once you see the yolks filming over, pull from the heat and slip the eggs into a plate. And voila! Perfect kind of, sort of over easy eggs. The whites are set and the yolks are runny but intact.
