Hello Mimi - I love 9x13 quarter sheet pans for focaccia. Metal pans conduct the heat the best. Any oven will do - I tend to use the pizza setting on mine and cook the focaccia near the bottom of the oven, this ensures the base of the focaccia gets crispy (the pizza setting concentrates heat from the bottom of the oven)…apart from that, no other special tools needed apart from a digital scale to weigh your ingredients.
