How do you balance between indulging in the food and looking fit?

I tried calorie counting and strict diets + cheat days but that got me nowhere. I the past year I am controlling my portions and I incorporate food that I really love by decreasing the amount of other food that day. For example, If I feel like eating big pizza for dinner I will decrease the amount of food I eat for lunch to make room for more calories. Also, I am eating desserts as part of lunch and never go above 80% of feeling full.
