I used to grate the veggies into stuff... eggplant, skinned zucchini, yellow squash are some examples of veggies that are mild in flavor and almost melt into whatever you put them in so they are almost undetectable

For my young kids I do any Bolognese/ chilli/ curry by blending the tomatoes with carrot, onion, courgette, red pepper and then just adding that to the meat. I got so fed up of them spotting veg and picking them out! Not one pot exactly but then just fry off meat and add the whole sauce ( with raw veg) and it just summers away

If your child likes chili or spaghetti, try stirring in some pumpkin puree or frozen squash. It smooths the acidity of the tomatoes and is barely noticeable.

what about huevos rancheros? if that is how it is spelled. I made it in a crock pot once. I had to make mine spicy because of a relative burnt off his taste buds years ago but I think with a few minor changes a kid would probably love it.
