Ideas?

I've got loads of tomatoes, potatoes, onions and over vegetables. I'm not sure what to make with it. Needs to be gluten free, milk free and soya free (allergies😭) really struggling to think of that I can make that won't be vile. I'm not very good in the kitchen 😂

Sounds like the perfect opportunity to have some roasted veggies! I'd add a little olive oil, salt, and pepper and put them in the oven at 425 F for 20ish minutes and then finish with 2 minutes on broil with oven door slightly cracked. Make sure to watch them like a hawk when broiling though (very easy to burn by accident). The trick with roasted veggies if you can't have cheese will be to serve with a really good sauce. You could try olive oil, maple syrup, mustard, and salt. Alternatively, you could simply chop up and sauté with a little olive oil and coconut liquid aminos. Liquid aminos never fail me.

I would totally suggest a Vegetable Soup or stew! I'm sure there are many recipes here on Whisk! And the Roasted veggies sounds perfect, too!!

slow roast the tomatoebs with herbs and olive oil, you can preserve them if needed, and use to make a potato bake, layer potatoes, onions and small pieces of tomato, pour over a vegetable stock and bake, you could add a layer of bread crumbs on the top for a crispy crunch.

I'd roast the veggies then make up soup, it's easy to freeze and great with some crusty free from bread
