Rice flower vs others?

Ive recently discovered I'm gluten intolerant. Ive alwahs been a picky eater and I am finding it hard to find good flower to use in order to bake beads, rolls, and other items. Any suggestions? I've found I can use rice flower for some things, but it is hard to find in my area. Coconut flower seems to leave an odd taste when I attempt to use it. Those are my only two experiences so far.

I would recommend the Americas Test Kitchen "How Can It Be Gluten Free?" book. It has the best flour blend I've used, and has recipes that are helpful in my opinion. Unless you buy a 1:1 baking flour/mix, you usually want a blend of flours for flavor and consistency. Gluten free baking frequently relies on xanthan gum as well to build structure in the absence of gluten. There is a lot of nuance to GF baking but don't feel discouraged, with practice it's totally doable.

Almond Flower and other nut or seed flowers are out of the question for me as well.
