Make sure you are using an appropriate size pan got how many eggs you are making, you dont want to fuss with them after yhey fo in the pan. Dont over whisk your eggs, make sure your pan is hot and well oiled when you put your eggs in the pan. Reduce heat and add your ingredients quicly, and put a lid on it. Adding water makes the eggs take longer to cook, and over whisking will add air and can make the eggs dry out and become spongy. Covering the eggs keeps them from drying out, and it traps in heat so they cook from the top and the bottom, allowing them to heat evenly and fluff up with out turning into a sponge
