And if you’re in a pinch for baking or similar, it might just save the day. All you have to do is heat milk with salt and acid (like lemon juice) until it curdles, and then run the curds through a processor until they’re…well…creamy. It takes under half an hour and could even save you cash, especially if you can get a good bulk deal on milk. Like most dairy products, the shelf life of cream cheese can be short. It can keep in the fridge for up to 10 days once it’s been opened, but what if you’re a slow cream cheese eater? And yes, apparently, these people do actually exist. Here’s the thing: you can freeze cream cheese. One thing to keep in mind is that the texture is often changed once it defrosts though, and it will be more grainy and crumbly. While you wouldn’t use it as a spread after freezing and thawing, you can certainly use it for cooking with.
