It can be used interchangeably with white rice vinegar. Black rice vinegar is made from a combination of black glutinous rice and other grains like wheat and sorghum. As the name suggests this vinegar is dark in color. It also has a bold, smoky flavor and is commonly used as a dipping sauce in Chinese cuisine. Red rice vinegar is sweet and tart. It's made from red yeast rice, a type of fermented rice, giving it its distinct red color. Used for dipping sauces and in seafood dishes. Rice vinegar is calorie-free, sodium-free, and a good source of antioxidants, making it a great way to add flavor to marinades, sauces, and dressings. You can also get seasoned rice vinegar which is usually flavored white rice vinegar. It might also be labeled as sushi vinegar. No matter which type you choose, rice vinegar is the perfect addition to a variety of dishes from teriyaki chicken to glazed salmon.
